About Kudoa sp. trachurus

Like other Kudoa species, Kudoa sp. trachurus produces intramuscular spore cysts that release proteolytic enzymes following the death of the host fish, causing post-mortem myoliquefaction that is commercially unacceptable. Genomic resources for this and related Kudoa species are important for understanding the molecular biology of post-harvest fish quality deterioration and developing detection tools for fisheries management.
